Henrietta Inman


Henrietta Inman is a baker, cook and author of CLEAN CAKES and THE NATURAL BAKER - and founder of Wakelyns Bakery in Fressingfield, mid Suffolk. She grew up nearby in east Suffolk, understanding the importance of local and seasonal food from a young age. After training as a pastry chef in London, she then went onto working in every section of the kitchen, from the sweet to the savoury, and in 2020, learnt to bake sourdough bread using local, heterogeneously diverse grains.

She believes that true creativity, gastronomy, and food justice and sovereignty come from baking and cooking with what is around us. This ethos is at the core of the work in the bakery, where the food from the arable alleys and tree lines of Wakelyns Organic Agroforestry and other agroecological farms inspire what is on the menu; the bread that is baked; the preserves that are made and much more. It is how we have always grown and eaten food and how she hopes we will again, as it is the only way to eat for Earth and human health, bringing joy and connections to every part of the food chain.

 Henrietta is an advocate for localised food and farming systems, and the important role that cooks and bakers must play in our current climate and health crises – creating a route to market for nature friendly farmers who are restoring biodiversity, transforming their delicious, nutrient-rich ingredients into truly nourishing food for our communities.
