Daniel Galmiche

Daniel Galmiche

Daniel Galmiche is a passionate champion of French cooking and a regular guest on BBC1’sSaturday Kitchen.  In 2008, he co-presentedwith James Martin two programmes for UKTV Food about the food of Champagne and Brittany. He has also appeared in Rachel Allen’s Home Cooking,BBC Food Poker and an episode of The Supersizers Eat… about the Restoration of Charles II.

Daniel’s interest in food was sparked at a young age and was born out of time spent on his grandmother’s farm in Alsace, where he learnt to appreciate fresh ingredients cooked simply and with love. After a three-year apprenticeship in France, he trained at London’s Le Gavroche under the tutelage of Michel Roux and, in 1989, was awarded Scotland’s Master Chef of the Year award at Knockinaam Lodge, near Portpatrick, in Scotland. He progressed to running the kitchens of some of Britain’s most prestigious restaurants and hotels: Harvey’s in Bristol, L’Ortolan, Cliveden House andThe Forbury Hotel in Reading, maintaining and gaining Michelin stars along the way. In 2009, Daniel was appointed as Executive Head Chef of The Vineyard at Stockcross near Newbury. Two years on, he was awarded the Relais & Chateaux Rising Chef Trophy for the stunning food produced by him and his team at The Vineyard.

Daniel’s first book, THE FRENCH BRASSERIE COOKBOOK, was published by Duncan Baird Publishers in September 2011. The book captures all the fabulous flavours of French brasserie cooking, offering traditional regional recipes based on fresh and delicious local ingredients from France’s terre et mer. World-renowned chef Heston Blumenthal says:

‘The French Brasserie Cookbook contains all the recipes you would expect, from Cheese Soufflé to Duck Rillettes, from Bouillabaisse to the perfect Tarte Tatin, but despite Daniel’s huge talent as a Michelin-starred chef, his book is extremely accessible. It is easy to use and full of inspiring recipes that will immediately transport you to a French brasserie in your own home.’

Daniel Galmiche lives in Berkshire with his half-Italian wife, Claire. They are often visited by his son, Antoine, who is already learning to cook with his father’s French flair and finesse but has a penchant for Claire’s Spaghetti Bolognese, describing it as ‘better than my dad’s every time!’
